One of the most recent items I received came in the Jingle VoxBox, a coupon for a free bag of Ore-Ida tater tots. And since one of the tasks for the Ore-Ida badge is to come up with a recipe, you know I had to think of something good. So here is my take on chicken gyro, with an Ore-Ida totchos twist!
I basically deconstructed a gyro sandwich for this recipe. Instead of the pita, I’m using Ore-Ida tater tots. And instead of lamb gyro, I made chicken (that’s all I had, but it will work with any meat of your choice). I borrowed two recipes I found online to make the chicken kebab and the garlic sauce. After that, I pretty much piled it up like a chicken salad; lettuce, tomatoes, tater tots (topped with a dash of salt), chicken kebab, garlic sauce, feta cheese, and a dash of parsley.
I was a little nervous about how it would taste since it was my first time making it, but it turned out so good! I was also afraid of the taste because I changed up the chicken kebab recipe so I wasn’t sure how that was going to end up, but surprisingly it came out perfect and so delicious. I ended up eating the whole thing almost by myself in one sitting.
Chicken Kebab Recipe (Original Recipe)
I used sour cream instead of yogurt because that’s all I had. I also used chicken breast instead of thigh, and I omitted the zest because I was too lazy to mince up zest since I don’t have a zester. I had to cut down the recipe to a quarter since I was only using one chicken breast. And I just left it as is instead of skewering them. I just cooked it on a stove-top in a frying pan for a couple of minutes on each side until the inside was cooked, and it came out perfect!
Garlic Sauce Recipe
4 cloves of garlic, mashed
1/4 cup olive oil
juice of 1 lemon
1/4 tsp salt
1/4 cup mayonnaise
Combine garlic, olive oil, lemon juice, salt, and mayonnaise in blender. Mix until it becomes smooth. Add more mayo to your liking for thicker consistency.
